On a crisp Autumn night what better way to warm the cockles than learning a trick or two about pickle-making? As many vegetable crops come to an end, Riverford Organic have introduced a range of pickling kits including Cucumber Pickle and Green Tomato Chutney. In light of this, Anna Colquhoun, Riverford cook and preserving master, hosted an intimate class in her London kitchen to share her vast knowledge of all-things-preserved.
We started with Green Tomato Chutney, moving on to Apple, Garlic and Sage Jelly and the British favourite- Piccalilli. The Kitchen was transformed into a haze of sweet and sour scents as each preserve bubbled furiously on the stove.
